Winter is Coming – No Bake Almond Butter Oatmeal Bites

Winter is coming, and so is the desire to sweeten my soul with some extra-lusciously, out-of-the-world snack. Therefore, I decided to book my snack way before the ‘actual’ winters. I have been doing this for a while now and believe you me; it requires a lot of patience with extra layers of FAT. Anyways, one day I just mixed a couple of ingredients to make my own recipe and Voila!


I tried to alter my favorite cookie recipe (let it be a secret :p) but failed every time. These little no-bake bites are inspired by my big time ‘cookie flops’. But they extremely satisfy my sweet chocolate chippy cravings and I am sure yours will too.

So, I started with toasted oats, flaxseed, coconut oil, some walnuts and delicious roasted almond butter. I swapped some more ingredients so as to add little cheesiness to my buds: bye bye flour and brown sugar. I simply blend them up with sweet dates and maple syrup. Then I made 10 good-sized round bites from it and store them in the fridge until firm.

You can obviously make as much as you want but you will need a larger food processor from the one I have.

And there you go, a sweet delight that is simply heaven to taste buds.

No Bake Almond Butter Oatmeal Bites

  • 1 cup whole rolled oats

  • 1 tb ground flaxseed

  • 3 tbs warm water

  • 1/4 cup roasted almond butter

  • 2 tbs maple syrup

  • 3 soft sweetened dates or 2tbs of maple syrup

  • 2 tbs coconut oil

  • 1/4 tbs vanilla extract

  • 1/4 tbs cinnamon

  • 1/4 tbs sea salt

  • 1/4 cup chopped walnuts

  • 1/4 cup chocolate chips

  1. Take a pan and toast the oats for 1-2 minutes until just browned.

  2. In a bowl, mix the flaxseed in warm water and let it thicken for 5-7 minutes.

  3. Now. add almond butter, maple syrup, dates, coconut oil, vanilla extract, cinnamon and sea salt in the food processor. Blend them.

  4. Add the flaxseed mixture and blend until smooth.

  5. Add walnuts, oats, coconut oil and pulse until combined.

  6. For more taste of chocolate, you can add the chocolate chips separately into the mixture after blending

  7. Roll the mixture into 10 balls and chill until firm, for at least an hour.


Note, if the dough is too sticky to work with, try chilling the blended paste for 15 minutes before rolling. Also, use certified gluten free oats if you’re gluten free.
